Sourdough dutch baby recipes are a staple in our kitchen. Each recipe is unique on its own, with flavor variations – both sweet and savory. And they make perfect use of extra sourdough discard!

One thing is for sure, our family loves all sourdough dutch baby recipes! Each sourdough dutch baby recipe has a unique flavor of its own – a little tangy, a little sweet and it scratches the ‘comfort food’ vibes. . And the texture is unmatchedit’s like a fluffy (yet custardy), pancake. Almost like a cross between a flan and a pancake.

The process is quite easy to make a sourdough dutch baby. Simply heat a cast iron skillet on the stovetop to melt the butter, combine your ingredients together (by hand, immersion blender / mixer or blender) and pour the batter into the hot skillet. Place the hot skillet into the oven and allow it to puff up before your eyes.

This is one of our favorite recipes for the Sabbath because we can easily prepare the ingredients while we rest. It is also a great way to use up excess sourdough discard with a whopping 1 cup (8 ounces) or two cups (16 ounces) if you accidentally made too much or have some sitting in the back of your fridge.

Second to sourdough bread, this was the next recipe we made with our low waste sourdough starter. Because I was gluten intolerant for over 14 years before trying sourdough, I wanted to try a sourdough recipe with no added flour. This was the perfect recipe for me because I did not have to wait for it tolong ferment and could truly ‘stir and go’ without worrying about a stomach ache.

Of course we had to kick off this roundup with the classic sourdough dutch baby / sourdough german pancake recipe. This recipe gave us all the inspiration to add in a variety of flavors – though it is truly good enough by itself.

2. Savory Sourdough Dutch Baby

After making so many different flavors of a dutch baby pancake, we decided to go the savory route one morning. The flavor combination is truly unmatched.

This recipe has breakfast sausage, cheese and spices in addition to the normal eggs, maple syrup and sourdough discard. Somehow the flavors reminded me of eating an English muffin breakfast sandwich with all the right savory notes. Truly so good!

And the best part? The amount of protein in one serving! 19 grams of protein? Count me in!

Nothing screams ‘spring is on the way’, more than fresh strawberries from the garden. Our neighbors always bring over pints of strawberries each spring and we eat enough to become a strawberry! This sourdough dutch baby came about when we needed to use up some frozen berries and a lemon. This mixed berry combination includes raspberries, blueberries, blackberries and strawberries. Like the lemon blueberry dutch baby, this recipe uses a full lemon for zest and a little bit of the juice.

Be warned – it is delicious and also has staining power from the berries. Not only were our fingers purple / blue from eating bites with our hands – but our mouths were too! My kids loved sticking out their tongues and giggling at the color.

Oh my does this recipe take us straight to the fall! It is one of our favorite sourdough apple recipes. The apples are sliced thin so they almost melt into the dutch baby.

The addition of cinnamon in this recipe makes it taste almost like a custard apple pie. This is our go to recipe the day after our extended family does our annual apple picking trip.

Including cranberries and walnuts in a sourdough dutch baby was an interesting combination. This dutch baby is not as light and fluffy as the traditional version.

However, the walnuts provide the perfect texture to the typically custard like center. And the cranberries provide a delicious ‘tart’ punch in each bite. We love how different sourdough cranberry recipes can be!
