Homemade Chocolate Spiders
Stir and Go method
Preheat the oven to 350 degrees Fahrenheit.
In a large bowl, combine butter (or oil), sugar, egg, sourdough starter, milk (or water), and vanilla extract until smooth.
To the wet ingredients, add in the flour, cocoa powder, chocolate chips, baking powder, salt. Mix until combined.
Grease the donut pan and add the mixture into each spot using a bag (piping method), spoon, ice cream scoop or cookie scoop.Fill the donut pan 3/4 of the way full. Bake 15-20 minutes until tops are firm to the touch and a toothpick comes out clean. Once the donuts have cooked, place on a cooling rack. Cool completely, frost and decorate as desired. Enjoy!
Long Fermentation Sourdough Donuts
To enjoy long fermented sourdough donuts, mix the milk, butter, flour and sourdough starter together. Cover with plastic wrap and place on the counter for 4-12 hours. Place in the refrigerator for a bulk fermentation period for up to 2 days, if desired. When ready to bake, remove the flour sourdough mixture from the fridge and allow it to come to room temperature. Crumble the flour / sourdough mixture into a mixing bowl, add the remaining ingredients and mix until combined until minimal lumps remain. If the dough is not coming together create a double boiler and mix the batter on LOW for 1-2 minutes until the butter melts. There may be some bubbles due to the baking soda.
Decorating Halloween Donuts
To make the homemade cream cheese frosting use a hand mixer to combine room temperature butter and cream cheese until mixture turns from yellow to cream/white in color.
Add in vanilla extract, salt (optional) and powdered sugar. Add color to frosting if desired.
To make the frosting, choose your colors of choice. Use separate bowls if making different colors. Add 4-6 drops of food coloring to frosting. For bold color, add more food coloring. Dip the donuts in frosting to cover them completely. Add googly eyes if desired.
Homemade Chocolate Spiders
Melt 2-3 Tablespoons of chocolate chips in the microwave or on the stovetop. Stir the chocolate chips chocolate every 30 seconds to prevent burning. Once the chocolate is melted, use a spoon to spread a dollop of chocolate chips onto wax paper - creating the body. Use the end of a fork, a chopstick or a toothpick to drag out the corners - creating eight spider legs. Place in the fridge or freezer until cooled. Remove from wax paper and place on top of sourdough chocolate donuts. The chocolate will not melt at room temperature once hardened.
Cocoa Powder
- If using regular cocoa powder, increase amount to 4 tablespoons. May need more liquid to counteract.
Bold Color Frosting
-
For brightest color, put each bowl of frosting in the microwave for 5-10 second intervals. Stir each time. Shades should darken with time.
Place in fridge until solidified and stir with a form until fluffy.
