Sourdough Mac and Cheese Bites

- 1 box mac and cheese (see notes for pasta alternative if not using boxed mac and cheese)
- 1-1/2 to 2 cups shredded cheese
- 1/2 cup sourdough breadcrumbs
- 1/8 tsp spices (optional - your choice of spices. We like garlic, onion, pepper)
- 1/4 cup nutritional yeast (optional, see notes)
To make this recipe, start by boiling the noodles to al dente. Follow the instructions for cooking time.
While hot, stir in cheese packet (if using boxed mac and cheese mix) or nutritional yeast. Add still hot, stir in the cheese packet (if using boxed mix) and shredded cheeses.
Place mixture into the fridge, or freezer, until cooled to the touch. Do not skip this step as it will ensure the cheese cools around the noodles, forming a solid shape when scooped. Once the mac and cheese has cooled completely, use a cookie scoop, ice cream scoop or tablespoon to make 1-2 TBS sized balls. Shape with your hands if needed.
Place onto a lined sheet tray and place into the freezer. This step will allow the mac and cheese balls to hold the circular shape when dipped in the breadcrumb mixture. Next, beat one egg in a bowl. In a separate bowl, mix together spices and breadcrumbs.
Remove the mac and cheese bites from the freezer. Dunk each mac and cheese bite in the egg bowl first and then into the spiced breadcrumbs second.
Heat the air fryer, ninja foodie or oven to 375 degrees Fahrenheit. Cook until the outside of the mac and cheese bites are golden brown- about 6-8 minutes depending on the size of the sourdough mac and cheese bite.
Enjoy alone or with dipping sauces. We love marinara sauce, ranch and ketchup sauces.
- If not using boxed mac and cheese, substitute 1 cup dry pasta of your choice.
- If not using boxed mac and cheese, add nutritional yeast for additional cheese flavor - up to 1/4 cup.
- Any variety of shredded cheese will work (american, gouda, colby jack, cheddar, velveta).
