Traeger Chicken Recipe

Smoky and juicy, these chicken breasts are smoked to perfection on the Traeger Grill before finishing their bake in the oven. Enjoy flavorful and juicy chicken breasts everytime.

  • 1 Traeger Grill Or alternative wood pellet smoker

Ingredients
  

  • 6 Chicken Breasts
  • Kosher Salt
  • Black Pepper
  • 4-6 TBSP Salted Butter

Instructions
 

  • Prepare chicken breasts by removing any fat or excess skin. Pat the chicken breasts dry. Next apply salt to each chicken breast and allow to rest in the refrigerator for a minimum of 1 hour. This can sit within the fridge for up to 4 hours prior to cooking.
  • Heat Traeger Grill to 225 degrees. While the smoker is heating up, remove chicken breasts from the refrigerator. At this time, the salt should have 'disappeared' into the chicken - aka they should be translucent. Next, apply a generous amount of black pepper to the chicken breasts
  • Once your smoker is heated, place chicken breast directly on the grill.
    While chicken is smoking,prepare foil packets. Cut one piece of aluminum foil and one slab of butter per piece of chicken.
  • Allow the chicken breast to cook until the chicken breast is a light golden brown color. It will temp on a thermometer probe above 100 degrees Fahrenheit, though not an internal temperature of 165 degrees Fahrenheit.
    Depending on the size of your chicken breast, cooking time can vary. This can take anywhere from one to two hours.
  • Next, pre-heat oven to 250 degrees F (Fahrenheit). Remove chicken from Traeger. Place each chicken breast into individual foil packets.
    Ensure the chicken breast is face down and add the slab of butter is placed on top. Fold sides (left / right) in first, then top and bottom to meet before rolling down to create an envelope. Place seam side up onto a lined sheet pan. Allow to finish in the oven until a meat thermometer reaches an internal temperature of 165 degrees F (Fahrenheit).
  • Allow chicken to rest on a clean plate for 5-10 minutes before slicing. Enjoy!
