Jump to RecipeThese high protein sourdough waffles are made with eggs, collagen, and lots of excess sourdough discard. They are flavorful and a great base for any mix in you would like. These waffles make a great addition to any meal prep for families looking to have high protein in their breakfast or with kids who love waffles. (Seriously – 4 waffles pack in 16g of protein!)

One thing is true about sourdough waffles – we always make a double batch. If I do not make a double batch, I can count on these being gone by the end of breakfast. Especially if they are slathered in butter and a hint of maple syrup.
This form of meal prep (by doubling a batch of food), feels very ‘Proverbs 31’ like by encompassing the act of stewardship to plan out our food in advance. By setting aside the time to make an extra batch of something to grab from the freezer, I feel we are better prepared for the day (and week) ahead.
In this season of life, I truly resonate with Proverbs 31:15 – “She gets up while it is still night – she provides food for her family”. I love baking when my family is asleep so they can wake up to fresh baked goods in the morning. While it might not happen every day but it sure does feel good when it happens, especially when it sneaks in a little extra nutrition.
We commonly rotate between prepping extra breakfast items like these sourdough protein waffles, green sourdough pancakes (thanks to spinach) and double chocolate sourdough muffins (made with zucchini).
These high protein waffles are made with additional eggs in the batter and a scoop of collagen (or protein powder). Not only is this recipe kid approved in taste, but they love joining in the muffin creation process.
My kids enjoy being in charge of mixing the batter, adding in various toppings and letting me know when the timer is up on the waffle maker. I know your family will like being apart of the kitchen activities, too!

Kitchen Equipment
There are a handful of kitchen equipment needed for these sourdough waffles including a large mixing bowl, a whisk, a measuring cup (for easy pouring) and a waffle maker.

Ingredients for sourdough waffles (high in protein)
There are three main ingredients in high protein sourdough waffles including sourdough discard, eggs and collagen (or protein powder). For a full list of ingredients in the recipe, please visit the recipe card at the bottom of the blog.
Sourdough discard: Use either active or sourdough discard within this recipe. Whenever we have a large amount of sourdough discard in the fridge, we like to use it within this recipe. The recipe is flexible as you can make as small or large of a batch as you would like.
Eggs: Eggs provide great protein within this recipe. If you have children at home who will eat eggs baked into things rather than on their own, try this recipe. The addition of eggs within this recipe not only provides extra protein but contributes to the waffles sponge-like texture.
Collagen (or protein powder): We love using collagen within our protein packed recipes. We find collagen is flavorless and also does not change the texture of the recipe. Our preference is to use an unflavored collagen because we like the waffles to have their own flavor profile to them. You can use any kind of protein powder you have on hand.
How to make high protein sourdough waffles
This is a simple stir and go sourdough recipe. No matter whether you stir these together in the morning or prep them the night before and allow the batter to long ferment, it is easy to make!
The option for this recipe is to combine all ingredients together within a mixing bowl. By stirring these together, all you have to do is combine the ingredients before pouring them into a heated waffle maker.

Step 1: Stir together all ingredients in a bowl.

Step 2: Heat the waffle maker and coat with oil.

Step 3: Pour batter into waffle maker.

Step 4: Add additional toppings (if desired). Cook until complete.

Step 5: Top with butter and maple syrup.
How to store
If you have leftover sourdough waffles, place them in the fridge for up to three days. Store in a glass container or ziplock bag. I recommend keeping the corner cracked if the waffles are warm or they will become soggy.
If you would like to make these ahead and place them in the freezer, place them in the fridge overnight. This will ensure any condensation occurs before they go in the freezer and become freezer burnt. To prevent the waffles from sticking, place wax paper between the waffles or place them to lay flat on a sheet tray and freeze before putting them in a bag.

Waffle Flavor Variations

Sourdough Protein Waffles
Equipment
- 1 Waffle Maker
- 1 Large Mixing Bowl
- 1 Whisk
- 1 Measuring Cup optional
Ingredients
- 3 eggs
- 2 scoops collagen Equivalent of 4 TBS. Can use protein powder
- 1 tsp vanilla extract
- 2 TBS milk or water +/- Used to thin batter
- 1 cup sourdough discard
- 1 pinch salt
- 1/4 tsp baking powder
- 2 TBS sugar
Instructions
- Stir together sourdough discard, oil (or butter), vanilla extract, sugar, baking powder, protein powder / collagen, milk (or water) and eggs in a bowl until smooth.Add liquid 1 TBS at a time to get a smooth batter- similar to pancake batter (thinner than muffin batter, thicker than water).
- Turn on the waffle maker and follow instructions to pre-heat. Oil the waffle maker. Use a measuring cup to pour onto the waffle waker. If adding inclusions, add them now.
- Bake the waffle in the waffle machine. Remove from the waffle and add toppings. Serve warm.

We use unsweetened collagen powder. Right now we have been using Vital Protein Beef Collagen and have not tested with other brands or flavors. One scoop is the equivalent of 3 TBS. Flavor Variations
