Sourdough Protein Waffles

These high protein sourdough waffles are made with eggs, collagen, and lots of excess sourdough discard. They are flavorful and a great base for any mix in you would like. (4 Waffles = 16G of protein!!)

Equipment

  • 1 Waffle Maker
  • 1 Large Mixing Bowl
  • 1 Whisk
  • 1 Measuring Cup optional

Ingredients
  

  • 3 eggs
  • 2 scoops collagen Equivalent of 4 TBS. Can use protein powder
  • 1 tsp vanilla extract
  • 2 TBS milk or water +/- Used to thin batter
  • 1 cup sourdough discard
  • 1 pinch salt
  • 1/4 tsp baking powder
  • 2 TBS sugar

Instructions
 

  • Stir together sourdough discard, oil (or butter), vanilla extract, sugar, baking powder, protein powder / collagen, milk (or water) and eggs in a bowl until smooth.
    Add liquid 1 TBS at a time to get a smooth batter- similar to pancake batter (thinner than muffin batter, thicker than water).
  • Turn on the waffle maker and follow instructions to pre-heat.
    Oil the waffle maker. Use a measuring cup to pour onto the waffle waker.
    If adding inclusions, add them now.
  • Bake the waffle in the waffle machine. Remove from the waffle and add toppings.
    Serve warm.

Notes

Using Sourdough Discard
If you are using sourdough discard, consider adding more sweetener to adjust to personal preference. The longer sourdough discard sits in the fridge, the more sour it can be. Adjust if needed. 
Collagen / Protein Powder
We use unsweetened collagen powder. Right now we have been using Vital Protein Beef Collagen and have not tested with other brands or flavors. One scoop is the equivalent of 3 TBS.

    • Apple cinnamon (Diced apples finely and sprinkle in cinnamon)
    • Blueberries 
    • Blueberry lemon (Add lemon zest and fresh or frozen blueberries)
    • Banana Nut (Add mashed banana and walnuts)
    • Mixed berries 
    • Chocolate chips
    • Nuts
    • Granola (We love adding granola and chocolate chips or granola and blueberries together)
  • Topping Options:
    • Butter
    • Cinnamon sugar
    • Maple syrup
    • Fresh fruit
