This sheet pan sourdough pizza is the ultimate mom hack for easy dinners. Make your sourdough pizza dough ahead and layer on the toppings before diving in.

This sourdough sheet pan pizza came about when I was feeling short on time after a long day at work. We had some frozen sourdough pizza dough in the fridge and rather than break out the cast iron pans for cooking, I spread this pizza on a well oiled pan, threw on toppings and let it bake away. 

This pizza is quick to make and can be customized to each persons liking. It is very hands off and makes for an easy dinner the whole family will enjoy. Plus, we love that you can use whatever toppings desired to ensure each person has their own “section”.

This sourdough pizza crust is half whole wheat flour and half all purpose flour, which makes us even happier since it is made with sourdough discard instead of commercial yeast. The health benefits are present and make this easy for the whole family to enjoy (and digest).

Because of the nature of this sourdough pizza, it makes the perfect weekday dinner for busy moms. Prepare the dough in advance and have a family pizza night dinner on the table in no time.

The best part about this recipe is – there are only a handful of dishes to clean at the end! A sheet pan and pizza cutter are the only things needed for this recipe.

Ingredients for Sourdough Sheet Pan Pizza

The quality of ingredients on this pizza matter, starting from the sourdough pizza crust – up!

  • Sourdough pizza crust
  • Sauce(s)
    • Homemade pizza sauce is our favorite. We commonly break this pizza down into multiple sections, we love using marinara / pizza sauce on one side and BBQ sauce on the other 
  • Protein
  • Cheese
    • Fresh mozzarella cheese or pre-shredded mozzarella cheese is a classic on pizza, though Colby Jack and cheddar work well. We often use an Italian blend (a mix of cheese types).
  • Additional toppings
    • Any of your favorite toppings are welcome. As we like to split our pizza into sections, we commonly make a BBQ chicken pizza side and a cheese or turkey pepperoni side. Peppers, mushrooms, pineapple, olives and fresh herbs (like fresh basil) are all great additions to pizza, too.

How to make sheet pan sourdough pizza

It is quick and easy to make a sourdough sheet pan pizza, especially if you already have the dough prepared and in the freezer. We like to make an additional sourdough pizza crust to have on hand for occasions like this.

To begin, preheat your oven to 425 degrees. For best results, take your favorite pizza dough and allow it to warm up and is at room temperature.

Oil a baking sheet pan well with olive oil or avocado oil or use a piece of parchment paper or a silicone mat. Spread the pizza dough out in a rectangular pizza shape on the sheet pan. Prick with a fork 8-10 times in various areas around the pizza to ensure it does not bubble too big.

If you oil your pan rather than use parchment paper or a mat, your crust will be crispy! Just be sure to oil enough so it does not stick and makes that crispy crust we all know and love.

Par bake the sourdough discard pizza in the oven for 8 minutes. The crust should be cooked through, though soft to the touch. It should not stick to your fingers when touched.

Remove from the oven and add sauce, cheese and your favorite pizza toppings. Place back in the oven until toppings are done to your liking. We put ours in for 5-10 minutes depending on how many toppings we have and if we want the cheese to be golden in color.

Remove from the oven and slice before eating. Serve with dipping sauce of choice (pizza sauce, ranch dressing, bbq sauce), shakable Parmesan cheese and red pepper flakes.

How to store sheet pan pizza

To store sourdough sheet pan pizza, cut into slices and place in an airtight container or ziplock baggie for up to 3 days in the fridge. Once cooled completely, you can place into the freezer for up to three months.

We like to place the cheese sides facing each other so it does not stick to the back of a slice of pizza when removed from the container.

Frequently Asked Questions

To reheat, the best method for the crispiest crust is to heat on the stove in a cast iron skillet or in the oven wrapped in aluminum foil. 

Do not place a lid on the skillet when reheating as the pizza will steam and the crust will become soggy.

It all starts with the base. Both a high quality crust (we like sourdough) and the cooking vessel (sheet pans are our favorite for this recipe, though a cast iron would work well, too!) matter.

Be sure to select a good crust to make your pizza taste delicious. When baking, make sure to use enough heat to prevent the pizza from sticking to the pan and to ensure the cheese stays melty!

  • 3/4 cup water
  • 1 tsp sea salt We prefer himalayan sea salt

Instructions

Notes

Sourdough Starter
  • Both active sourdough and sourdough discard work within this recipe. Active sourdough will provide more rise within the pizza crust.
